ABOUT US

Our Pitmaster, Stuart McClean, is an East Texas Native who grew up watching his uncles Charles Willis AKA " Papa Charlie" and " Jimmie Cydle" Jackson, cook East-Style BBQ. In east Texas, hickory is our primary wood of choice, and that's something that's stuck with me to this day. I remember my uncles always had the best BBQ in the world for me growing up, and I fell in love with cooking at a very young age. I've spent most of my life trying to recreate what my elders brought to the table every holiday or special occasion. I relocated to Nashville after high school and joined Omega Psi Phi Fraternity INC, where my love for cooking BBQ took off. It all began as hobby smoking meat in my backyard in 2009. Over the years I've shared by passion with close friends and family while perfecting my skills over the last 14 years. Each year during the holiday I offer a special holiday menu and people have fallen in love with my cajun smoked turkey. In December of 2022, we purchased a 500-gallon offset smoker trailer and partnered with a lifelong friend/Chef Avern Alexander, to bring BaQ-Bone BBQ to masses. BaQ-Bone BBQ specializes in crafted smoked meats sourced from local farmers, butcher shops, and fish markets when available. We stick true to our roots and focus on Craft Texas-Style BBQ with features of Beef Brisket, Beef Short Ribs, and jalapeno beef sausage. We will also infuse some southern cajun flavor passed down from my grandmother Dorothy Starling and Caribbean flavor passed down from my father, Stuart McClean Sr, a Trinidadian-born visual artist and self-taught Chef. The flavor infusions will come alive in our seasonings, sides, and in the form of specialized menu items from time to time. Book us for your next event, tailgate or Dinner party.
